Ais Kacang: The ultra-cool treat for a sweltering day

A Malaysian favourite, Ais Kacang, or ABC as in Air Batu Campur, offers cool relief on a hot, thirsty day.

In a hot and humid country like Malaysia, nothing beats this icy cold dessert that soothes the throat and cools the body.

Pretty much everyone loves the sweet-tasting shaved ice with numerous toppings such as red beans, creamy sweet corn, grass jelly and palm nuts.

More adventurous souls add ice cream, fruit, peanuts and raisins. This recipe is for the version commonly found in Penang.

Dark brown sugar is used instead of Gula. A little red colouring was added to make it look more authentic.

Ingredients

  • 2 cups ice cubes or crushed ice

Syrup (makes two servings)

  • 50 g dark brown sugar
  • 80 ml water
  • 3 drops red colouring, (optional)

Toppings

  • 2 tablespoons condensed milk or evaporated milk
  • 2 tablespoons canned red beans, in kernels
  • 2 tablespoons canned sweet corn, cream-style
  • 2 tablespoons grass jelly pieces
  • Palm nuts, (optional)

Method

  • Combine all the syrup ingredients in a small saucepan and place over medium heat. As soon as the sugar melts and the syrup starts to bubble, turn off the heat. Set aside and let cool.
  • Prepare the shaved ice in a blender. Make sure the ice is completely shaved.
  • Transfer the shaved ice to a bowl and add two tablespoons of syrup, followed by all the toppings. Serve immediately.
